Fruits like Chayote, Red Plantain’s, Rambutan and Mangosteen are a surprise to first-time travelers, but are readily available locally. Although the afore mentioned fruits can be eaten raw, when combined with spices and other natural ingredients, these local treats awaken the palette’s of Vegan foodies in a way never experienced before coming to Costa Rica.

At Waterfall Villas Pejibaye, Costata Romanescu Squash, Carambola and Cassava Shrub Root, are sometimes used to create Asian, Mexican, Mediterranean, and local Costa Rican Vegan meals. Upon request, we prepare Gluten and soy free meals, macrobiotics, Ayurvedic Dosha balancing meals, Detox, and salt & sugar-free dishes.

Our own highland organic farm, located in the Cascadas Farallas Waterfall Reserve in the heart of Costa Rica’s pacific coast area, has a micro-climate that produces unimaginable tastes and are readily renewable resources of health for the environment, as well as health-conscious Vegans. The unique tropical flavors and textures we serve tantalize the taste buds of the most discerning Vegans.

For Vegans who enjoy a raw food diet, Waterfall Villas prepares uncooked vegetables and fruits, nuts and nut pastes, grain and legume sprouts, seeds, plant oils, sea vegetables, herbs, mushrooms, and fresh juices— or seasoned and heated to a temperature beneath 48 °C (118 °F).

Costa Rica’s Waterfall Villas also recognizes the importance of honoring Vegans on a macrobiotic diet. We choose foods that hearken back to a more traditional way of balanced eating and living. Your plate will be brimming with nature’s local bounty— which is never stored or prepared in advance—such as  brown rice, millet, corn, oats, barley, amaranth, teff, quinoa, buckwheat and vegetable’s like lettuces, kale, collards, arugula, chicory, parsnips, carrots, rutabagas, turnips, radish, onions, garlic, leeks, sweet potatoes, squash, cabbage, broccoli, cauliflower and more.

Vegans seeking the healing properties of an Ayurvedic diet can relax at Costa Rica’s Waterfall Villas, knowing we consider individual constitution, health maintenance, digestion and constitutional balance, and the importance of proper food combinations for optimal well-being, when preparing meals. Our recipe’s address everything from the common cold and skin problems to stabilizing blood sugar in diabetics, all using local herbs, fruits and vegetables!

Although Vegans are naturally health conscious, the staff at Costa Rica’s Waterfall Villas recognizes the need for further detoxification twice a year. In this case we offer either juice fasting or three specialty meals per day that include fresh coconut water, Noni, and Green Goddess Smoothies with organic kale. Exotic fruit plates, tofu scrambles, fresh made granolas, chia seed porridge, and fresh coconut cream can also be served as healthy breakfast alternatives.
